Healthy Fall Dinner Ideas

As the days get shorter and the temperature drops, comforting dinners become especially appealing. Fall is the perfect time to enjoy cozy, hearty meals that warm you from the inside out, without sacrificing nutrition. I for one, absolutely love the fall season and everything that comes along with it. The red, orange and yellow leaves, the cozy coffee shop & sweater vibes, and most notably, the food!
The best fall dinners often start with seasonal ingredients such as pumpkin, squash, sweet potatoes, leafy greens, and beans. These foods add colour, flavour, fibre, vitamins, and minerals, while recipes like soups, stews, baked pasta dishes amp up the comfort factor. Comfort meals don't need to sacrifice on nutrition!

This Pumpkin Lentil Soup is comfort in a bowl! This soup is packed with plant based protein, fiber and veggies, and makes for the perfect cold weather meal. The lentils add a heartiness that makes this soup come out half soup, half stew for a super hearty feel.
